On the way to Florida from Oxford, we pass through a most peculiar town. It has a water tower that quite literally moons drivers on the interstate. It looks like a giant blushing heinie. Yep! It is the peach-shaped water tower of Chilton County, Alabama. Chilton County is famous for two things that I know of: garbage bag peaches and the peach-butt water tower. “Garbage bag peaches?” you ask? Why yes, these are the kind of plump, ripe peaches you literally have to eat over a garbage can because they drip so much juice. We always stop on our way to the beach in the summertime to buy a case of peaches for the week.
Peach and Blueberry Cobbler from Come on Over! Southern Delicious for Every Day and Every Occasion
This cobbler is super easy to throw together so you can get back to beach business: drinking, eating, and sunning.
Directions
1. Preheat the oven to 350 F.
2. Combine the peaches, blueberries, 1 cup of the sugar, and ½ cup water in a saucepan and mix well. Bring to a boil, then simmer for about 10 minutes. Remove from the heat.
3. Put the butter in a large ovenproof skillet or 3-quare baking dish and place in the oven to melt.
4. Mix the remaining 1 cup sugar, the flour, and milk slowly to prevent clumping.
Pour the mixture over the melted butter. Do not stir. Spoon the fruit on top, gently pouring in the syrup. Sprinkle the top with cinnamon (if using). Bake for 30 to 45 minutes, until golden-brown. (The batter will rise to the top during baking.)
5. To serve, scoop onto plates. Serve with your choice of whipped cream or vanilla ice cream.
