Adapted from a recipe by the late, great Dick Bradsell, London. Bradsell is known as the man who (almost) single-handedly changed the face of the cocktail scene in London in the 1980s. I knew him only slightly, but I was lucky enough to spend a couple of hours in the now defunct Colony Room Club when he was behind the bar there, and afterwards he and I had a good chinwag at Groucho, the London Club that boasts many celebrity members. To say that Dick Bradsell was a quirky character doesn’t do him justice. Bradsell was known for creating a number of cocktails, and my favorite is the Treacle. It’s so darned simple. And it’s so darned fabulous.
Recipe
Stir the rum, simple syrup, and bitters together in an ice-filled old-fashioned glass for at least 20 seconds. Float the apple juice on top of the drink.
