Ingredients
1 cup sugar
1 cup water
1/4 cup fresh basil leaves
1 bottle (750 ml) dry white wine
2 cups frozen watermelon pieces, bite-sized
1 cup watermelon seltzer OR 1 cup watermelon juice + 1 cup plain seltzer
Instructions
1. Make the basil-infused simple syrup: In a small saucepan, combine the water and sugar. Cook, while stirring, over medium heat until the sugar is dissolved. Add the basil leaves. Remove from heat and cover the saucepan. Steep the basil in the syrup for two hours. Remove the leaves and pour the syrup into a small jar. Refrigerate. The syrup will keep in the refrigerator, tightly sealed, for up to two weeks.
2. Combine the wine, fruits, and 1 cup of the simple syrup in a large pitcher or container. Cover and refrigerate for four or more hours. Add ice and seltzer. Stir and serve, garnishing glasses with basil leaves if desired.
