Triple layered bottom plating
Stainless Steel is not the best uniform conductor of heat, so an added inner layer of Aluminum is placed in between two layers of Stainless Steel to provide a more uniform heat dispersion without burning of the rice. The Aluminum is encapsulated by Stainless Steel, so there is no possibility, ever, of leakage into what you are cooking.
