How do I know how much battery left on the TH80 PRO keyboard?

You can press FN+B to check the remaining battery. When your keyboard is fully charged, the green lights of 1-0 keys will turn on. If the keyboard is down to 90% battery, only the 1-9 key's green light will turn on. ...

How to remove the white light mode(ctrl+backspace)?

We already removed the white light mode(Pressing Ctrl+Backspace) for the th80 pro keyboard.

Why is the ctrl button always green? Is this defective?

It means the keyboard is being charged, you may download the firmware to update the keyboard, then the green light will be on for 10 seconds after the keyboard is connected and then off.

Can you change out the knob? Or is it permanently stuck to the board?

The metal knob is hotswappable thus you may replace it with other color knobs
