Creamy Fudge Pops
Ingredients
1 (15-ounce) can full-fat coconut milk
1/2 cup unsweetened, dark cocoa powder
1/3 cup maple syrup
1 tablespoon alcohol-free vanilla extract
Fudge pops should be part of every kid’s (and parent’s!) life. After all, what’s summertime without them—they’re the perfect ending to a day in the sun. Now you can make a healthy, creamy version at home that offers healthy fats and antioxidant-rich cocoa. MAKES 6 FUDGE POPS
In a blender, combine the coconut milk, cocoa powder, maple syrup, and vanilla.
Blend on high speed until smooth. Pour into ice pop molds or paper cups (inserted with small ice pop sticks).
Freeze for at least 4 hours or up to overnight.
Storage: Keep in an airtight glass container in the freezer for up to 3 months.
Tip: Try using cacao, a less processed form of cocoa, if it’s available.
